This year’s Home & Garden Expo, sponsored by KTSM News Channel 9 at the El Paso Convention Center in February was the perfect event to introduce a fresh green salad glazed with a light and spicy dressing. Our beloved New Mexico green chile is a fun and spicy staple, giving this light vinaigrette a kick of flavor. The spicy mustard adds a tasty surprise, and helps to emulsify the ingredients to give it a smooth consistency.
Chile Vinaigrette Dressing 1/3 cup minced green onion 3 tbsp cider vinegar Pinch of sugar Pinch kosher salt 3/4 cup olive oil 1/4 cup minced green chile 2 tbsp spicy brown mustard 5 cups of salad greens 1 cup grape tomatoes Combine all ingredients, except the mustard, in a small glass bowl. Add the mustard and whisk until well blended. Serve over crisp, chilled greens.
