Whether your summer picnic is on the patio, backyard, or under a sprawling Ponderosa pine at Aguirre Springs, you’ll want to include America’s favorite side dish – potato salad. After all, what’s a picnic without a tasty tater toss? And those of us who live in this sizzlin’ area of the Southwest will often add chile pepper to enhance and brighten otherwise ho-hum potato dishes, making Peppery Tater Toss Salad the ideal picnic choice. When we think “picnic” we think “food safety.” Dishes prepared with mayonnaise, for example, spoil more quickly. Peppery Tater Toss Salad skips this well-known hazard by tossing the toothsome potato mélange with refreshing lime juice vinaigrette. Easy to prepare, this palate pleasing and colorful dish is certain to become a picnic favorite.
Peppery Tater Toss Salad Serves 6-8 4 medium boiling potatoes, unpeeled (white round, red-skinned or new) 1 cup fresh corn kernels (about 2 ears of corn) Lime Juice Vinaigrette (recipe below) 3 serrano chiles, stemmed, seeded and minced 1/2 medium red bell pepper, diced* 1/2 medium green bell pepper, diced* 1/2 cup finely chopped red onion 3 tbsp chopped cilantro (optional) Salt and freshly ground black pepper, to taste
In a large pot, cover the potatoes with water and bring to a boil over high heat. Lower the heat, cover and simmer until tender, about 25 to 30 minutes. In the meantime, prepare the Lime Juice Vinaigrette (recipe below). Remove cooked potatoes from heat and drain. Refrigerate. Strip husks and silk from ears of corn. Using a sharp knife, cut kernels from ears. In a small saucepan, simmer the corn in a small amount of water for about 2 to 3 minutes. Drain and rinse with cold running water. Set aside. Peel and cut the chilled potatoes into 1/2 inch to 3/4 inch cubes. In a large bowl, combine the potatoes and corn, and then mix in the vinaigrette. Add the chiles, bell peppers, onions, and cilantro. Season with salt and pepper and mix well. Serve at room temperature or slightly chilled. *Add more, if desired.
